If you have ever been on a carnival cruise, I'm sure you aren't a stranger to their melting lava chocolate cake. I think I had one (seven) every day.

the ooey-gooey, don't look at the calories, lava cake.

yield: 8 ramekins

7 ounces semisweet chocolate chips
7 ounces butter
6 eggs
3 ounces sugar
4 ounces flour

1: melt chocolate & butter together.
2: in a separate bowl, mix half of the eggs with the sugar. Whisk for a few minutes. Add flour. Then add the rest of the eggs.
3: add egg mix to the melted chocolate mix.
4: pour mixture in individual ramekin cups.
5: bake in over 390 degrees for 15-20 minutes (i would advise baking them between 10-12 minutes for a gooey center & half-baked edges. If you bake them between 15-20 minutes it will come out more cakey.)
6: To serve, sprinkle top with powered sugar & serve with a scoop of vanilla ice cream.
