sugar saturday. (I wish every day started with 'S')


Well, it could only last so long. Here is another recipe. (I do eat regular food like you know, like broccoli so take your carb-counting judgements out of here & eat a cookie.)

If your inner 6 year old is craving sprinkles & goodness, this cookie is for you. If you are really craving a sugar high, shove some rainbow chip or creamcheese frosting between two of these treats. It's a good idea. (Also plan for a nap afterwards.)

Funfetti, Cheesecake Cookies

*original recipe

1 box Funfetti cake mix (You can't go wrong with Betty Crocker.)
1 small box instant cheesecake pudding mix
1/2 cup vegetable oil
2 eggs
1 teaspoon vanilla, the good stuff.
3/4 white baking chips

+ preheat to 350 F. line cookie sheets with parchment paper (or a Silpat, if you have that luxury.)
+ in a stand mixer, combine cake mix, pudding, oil, eggs & vanilla until dough forms. fold in 1/2 cup of the white chocolate chips. With the remaining chips, stick a few on top of every cookie.
+ bake for 8 to 10 minutes or until the outer edges start to look golden. let the cookies cool then move them to a wire rack or to your mouth.
